emily, kayla and i ate at spagio in grandview this past weekend and ordered this amazing eggplant-balsamic pizza. it inspired me to create an eggplant parmesan for dinner on monday.
you'll need:
an large eggplant
olive oil
marinara sauce (i used my homemade)
fresh parmesan cheese
oregano
pepper
mozerella cheese
slice eggplant 1/4" thick
in a big pot, bring water to boil and set in eggplant slices and let stand for 5 minutes.
this basically softens the eggplant so it isn't so raw.
put a layer of sauce in marinara at the bottom of a glass dish and nicely layout eggplant slices.
coat with more sauce, parmesan, oregano, pepper and top with mozerella cheese.
i totally over indulged in this but i would offically eat eggplant parmesan over chicken parm anyday.
